I've been looking forward to my friends' 2nd annual chili cook off all year! This year I decided to use Rachael Ray's White Lightning Chili recipe and kick it up a notch. Some people might debate if this is truly a chili but if Rachael says it is, I agree :). I adjusted the recipe twice and really enjoyed the final combination. The longer the chili simmers, the more the flavors will develop. I couldn't think of a clever chili name so decided to go with a Hulk Hogan theme... because why not?? haha. I had so much fun getting the presentation together and even more fun hanging with friends. If you like white bean chili with a little spice, you'll love this recipe!
Turkeymania Chili
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 lbs ground turkey
- 1 tablespoon ground cumin. (Note: the original recipe calls for 2 tablespoons but I'm not a big cumin fan.. there I said it!)
- 1/2 large yellow onion, diced
- 1 jalapeno, seeded and minced
- 2 teaspoons minced garlic
- palm full of fresh cilantro
- Pinch of cayenne pepper
- 2 cans (14 oz) chicken broth. (I normally cook with low sodium chicken broth but for the cook off, I used the regular broth for more flavor).
- 15 oz can Great Northern beans drained
- Salt
- 8 oz shredded pepper jack cheese + more for toppings
- Tabasco Chipotle Pepper Sauce
Instructions
1. Heat dutch oven then add olive oil. Once oil is hot, add ground turkey and cumin.
2. Cook turkey stirring frequently until meat starts to brown.
3. Add onion, jalapeno, garlic, and cilantro. Reduce heat to medium and cook 5 minutes.
4. Add broth, beans, and salt to taste and bring to a boil.
5. Reduce heat to a simmer. Add shredded pepper jack cheese and pepper sauce to taste.
