The Joy of Meal Prep

Some people dread meal prepping for the week and I get it! It can be hard to figure out what you want to eat for the week and find the time to cook multiple meals. What if you aren't in the mood for enchiladas anymore? What if you have too many leftover ingredients and end up having to throw them away? Well here are some reasons why I love meal prep and how I find the joy!


1. I like to prep on Sunday afternoons/evenings. I usually pour a glass of wine and play fun music to make it feel less like a chore.


2. It helps me avoid bad eating during the week if I already have meals prepared. I'm an early riser so eat breakfast super early. When I get home from work, I'm usually ready for dinner. If I have food prepared at home it means I won't pick up pizza.


3. I look for food inspiration throughout the week (normally on Instagram) so that coming up with ideas is easy. I don't make a lot of the same dishes twice but I would definitely recommend rotating favorite dishes to make this process easier or designate meal nights such as meatless Mondays, taco Tuesdays, leftover Thursdays, etc.


4. I try to use leftover ingredients in other dishes. For example, I can use grilled chicken in a salad and then use the leftovers to make tacos.
