Sunday Scaries Cure

Have you ever had the Sunday Scaries? That anxious feeling that your weekend is coming to an end and your work week is about to start up again? Well I get them a lot! My cure is to listen to music while cooking a delicious meal. This past Sunday I decided to make parmesan risotto with salmon and sauteed broccoli with Everything But The Bagel Seasoning. The creamy risotto was so comforting! The sweet salmon and broccoli with a little bit of crunch helped to round out the dish. It was so satisfying for a Sunday dinner and would be impressive for entertaining.


Parmesan Risotto

Ingredients

- 1/4 cup butter

- 1/2 medium onion

- 1 tablespoon lemon juice

- 1 cup arborio rice

- 1 teaspoon thyme

- 3 cups chicken stock

- Salt and Pepper to taste

- 1 cup grated parmesan cheese

- 1/4 minced parsley


Instructions

1. Melt butter in instapot under saute mode (If you don't have an instapot, follow these instructions on how to cook to risotto).

2. Add onions and saute 5 minutes.

3. Add rice and saute 3 minutes.

4. Add lemon juice and stir. Stir in chicken stock, pepper and thyme.

5. Add lid and set instapot to rice mode.

6. When the instapot is done cooking, remove lid and stir the risotto. If it comes out soupy, cook for longer.

7. Stir in parmesan, add salt and pepper to taste.

8. Sprinkle parsley before serving.


Garlic Honey Salmon

Ingredients

- 2 salmon filets

- Salt and pepper

- 1 tablespoon olive oil

- 2 garlic cloves, minced

- 1 tablespoons honey

- 1 tablespoon lemon juice


Instructions

1. Heat oil in large pan.

2. Season salmon with salt and pepper.

3. Add salmon to pan and cook for 5-7 minutes.

4. Combine honey and lemon juice in small bowl to make a sauce.

5. Flip salmon.

6. Add garlic and sauce to the pan.

7. Cook salmon for 3 minutes or until fully cooked.
