This is my P.F. Chang's chicken lettuce wraps dupe! I like to use ground turkey instead of chicken because I think it's more flavorful. It's definitely a crowd (and boyfriend) pleaser. Let me know what you think!
Ingredients
- Avocado oil spray (or cooking oil spray of choosing)
- 1 lb. ground turkey (I recommend buying the higher fat content ground turkey)
- 1/2 white onion, diced
- salt & pepper, to taste
- 2 tsp. minced garlic
- 1/2 tsp. ground ginger
- 3 tbsp. coco aminos (or gluten free soy sauce)
- 1 tbsp. and 1 tsp. rice vinegar
- 1 tbsp. sesame oil
- 1 tbsp. peanut butter
- 1/2 tbsp. water
- 1/2 tbsp. honey
- 3 tsp. chili garlic sauce (use less if you want it less spicy)
- 3 green onions, chopped
- 4 oz sliced water chestnuts, drained and chopped (use half of an 8 oz can)
- Butter lettuce leaves, rinsed and patted dry (optional: you can add the dish to a bed of lettuce of your choosing)
Instructions
Heat a large, non-stick skillet on high lightly coated with avocado oil spray.
Add chicken, onion, salt & pepper. Break up chicken until it starts to brown.
Mix in garlic and ground ginger and cook until the chicken is no longer pink.
Mix coco aminos, rice vinegar, sesame oil, peanut butter, water, honey, and chili garlic sauce in a microwave safe bowl. Heat in microwave for 20 sections and then stir until smooth.
Mix sauce into the skillet.
Add green onions and water chestnuts and cook for 2 minutes.
Wrap in cold lettuce leaves or serve on top of a bed of lettuce.
